how does one normally go about this?

service manual is the usual source of information. Or if
you post your model here, someone might have tips for you.

Most often, you unscrew a screw or two and pop a plastic
panel. Then there might be friction tabs or another screw
down but it's obvious how to get the drive out. You may
need a good quality very small phillips screwdriver to get
the screws out without mangling them- some laptop
manufacturers put thread-lock on the screws so there's a
good bit of torque needed to break them loose the first time
and you DON'T want to strip the head on one of those screws
even if you have to go out and buy a better screwdriver
first. A typical decent screwdriver has a chromed shaft
then a black, higher carbon tip set into it. Anyone who
owns a laptop or services them ought to get such a
screwdriver, IMO.

Generally not very but It depends on the laptop and your ability.
I have a panasonic tough book that has a door that the HD slides out
of, had a fujistu with a screw on cover over the HD on the bottom, on
my HP, I have to remove the keyboard to get at the HD.
It's also very easy to destroy something else while you're at it if
you're careless or klutzy.
If it's not obvious where the hard drive is hiding, first thing is try
searching with google for 'replacing <your laptop model> hard drive'.
Or try your laptop manufacturers website. Here's an example from HP:
